To cultivate the way, one must first cultivate the heart, to cultivate the heart one starts from cultivating the body. Those whom is culivating  spiritually would understand the meaning behind meat abstainment and those that has yet to discard all worldly desires and isn't aiming to attain enlightenment would know it's not a life long thing, well at least not until you hit a certain level of  cultivation or a step of 2 away from enlightenment.

There are purely semantic/scientific approaches to enlightenment(if we view it as disappearance of identification).
Only most of western science have forgotten about it...

But it doesn't require religious attitude, its purely physiological alignment of nervous system and semantic structures.
Now, if we view other stuff added to it, going beyond the identification part then it may require much more and that would be up to the understanding of the school or practitioner.
Yet the base fundamental step of misaligned identification is not that complicated and one can safe many years of meditation if they knew where to aim and what to learn instead.
(materials based on realigning the nervious systems can do what meditation on names, items and words can't do for many years for some).

To understand enlightenment, one must subscribe to the idea of reincarnation and understanding reincarnation then one would see why one are striving to achieve enlightenment. Reincarnation is deeply rooted into the aspect of karmic retribution, the more karmic debt you sow this lifetime the higher probability you are going to be banish into the path of the animals e.g. reincarnate as a cow or fish or chicken. The idea of abstaining from meat is also closely related to "Cannibalism" for the lack of a better term, that steak you are consuming now for all we know might be your mother or another human being in their past life and by that you are eating your own species akin to cannibalism spiritually???

Enlightenment is to break away from this vicious cycle but then again this is just a small part of what enlightenment is all about and there's plenty more to it than what i just babbled on and what do layman like me whom barely shed any worldly desires know right? But then if one view this semantically or scientifically just proof one is still very much attached to worldly desires, simple as that. Like it or not this "religious" view on Karma and enlightenment is deeply rooted within CM, as cliche as it may sound, what can be conveniently blame on karma when all the CM theories or formulas doesn't work has much truth in it. That is why by doing good deeds and accumulating merits, one can ignore FS or CM for that is the most direct way to achieve self betterment albeit the most tedious & slowest way to achieve it. Humans are inherently greedy and always opt for short cuts and cutting corners often ending up with the shorter end of the stick  ;D

There are many religions around the world. And many paths people can take.
Avoiding desire... Parts of Buddhism aim for that. Not all, even Tibetan Buddhism aims at using desire as a means to get enlightenment by not grasping at it. All forms of Tanra do. But some parts of Buddhism, the "mainstream" one, usually aims for it.
Very few other religions aim for that, however.

But people aiming for enlightenment now, may figure out when they get it, nothing much will change, other then their perception. And while that is a lot and can help much, if someone thinks they are here to get that, they may be in for some surprises along the way.

From what I'm aware of, there isn't anyone that can exit here by abstaining from desire.
There is support from humanity that is needed to be able to move beyond, and most people aiming at that are too isolated from their environment to gather the support they need for it.
It still has its place, can get further then other religions sometimes, but not as far as many seem to think.

All those people meditating in caves and stuff, can make wonderful preparation for next lives when real tasks are worked on, but it won't get them anywhere by itself.
